Chef Q&A

Well recently some of my students wanted to do a little Q&A session with me about me personally and culinary. If you have any questions feel free to email me at chefpatrickartz@gmail.com and ask them! Here is the outcome from that session:

What inspired you to be a chef?
Well unlike most chefs I did not start working in a restaurant at a young age. I started cooking at home with family and always watched cooking shows on TV. It really wasn't until my senior year in high school that I decided this is what I wanted to do for the rest of my life.

What is your favorite dish to cook?
Hmm...well for me I love to catch, cook, and eat seafood so I would have to say paella. I mean how can you go wrong with a tomato base, seafood, some veggies, and sometimes rice all cooked together low and slow?

What inspires you to create a new dish?
Well the biggest factor is the ingredients that are the freshest at the time. I am all about using fresh greens and proteins whenever possible. I mean why use a canned product when there is a farmers market in the area.

How important is plate presentation to you?
Presentation is very important. It's visual art, you taste it, you smell it, you can feel the crunchiness -- it carries several art forms into one. They say you first eat with your eyes. It's enjoyment for me and the chefs (to plate a meal). Presentation is something you can't really teach. It's where the creative, artistic side of the individual chef comes out. Some of it's how you want it to be (eaten), how you want it to taste, what kind of plate you have or how it's gonna look sitting on the plate.


Where would you want to visit for food?
Spain and Japan are probably the highest on the list. Spain's an old country. They're very good at producing olive oil and wines. They're good at fishing and good at curing meats, sausages. That would be fun just to eat all that stuff. Can you imagine the cheeses there? Japan's a good place because they're a small island and they don't have room to grow a lot of produce so they focus on high quality product. And they have very good seafood.
